Behind the Scenes: Catering Wood-Fired Pizza on The Block (Season 22, Episode 48)

One of the proudest moments since starting Antimo Pizza Chef was rolling our wood-fired pizza truck onto the set of The Block (Season 22, Episode 48).

When I grew up making pizza in Naples, I never imagined my dough and our little blue truck would end up on one of Australia's biggest television shows. Here is a quick look behind the scenes at how the day unfolded and how we feed a high-pressure TV set.

What It Takes to Cater on Set for The Block

  • Fast turnaround for a hungry crew: On a TV build site, tradies, contestants, camera operators, and producers don't have two hours to sit down and wait for a plated meal. They need hot, substantial food ready the moment they step off tools.
  • 90-second bake times at 450°C: Because our wood-fired oven runs at full Neapolitan heat, we were pulling fresh pizzas out every 60 to 90 seconds so the buffet table stayed loaded nonstop.
  • 72-hour fermented Neapolitan dough: Every dough ball was mixed and cold-fermented in advance so the base stayed light, airy, and easy to eat on the go.
  • Compact truck footprint: Building sites are tight, busy spaces full of Utes, skips, and equipment. Our compact mobile pizzeria truck slotted right in without blocking site access.

What We Cooked on Episode 48

  • Classic Margherita: San Marzano tomato sauce, fior di latte mozzarella, fresh basil, and extra-virgin olive oil.
  • Diavola & Pepperoni: Always the first tray to disappear when feeding tradies and site crews.
  • Capricciosa & Mushroom Truffle: Loaded with Italian ham, mushrooms, olives, and rich mozzarella.
  • Vegetarian, Vegan & Gluten-Free options: Prepared separately so every cast and crew member could eat with the team.
  • Famous Nutella Dessert Pizza: How we finish every single event—warm wood-fired dough spread with Nutella and dusted with icing sugar.

Bring the Same Setup to Your Next Event

Whether we are filming on The Block, feeding 200 staff at a corporate workplace lunch, or parking in your driveway for a 40th birthday, we bring the exact same truck, the same Italian ingredients, and the same 2-hour all-you-can-eat service.
