Matteo leads our Antimo Pizza Chef team in Sydney. While I grew up in Naples in the south of Italy, Matteo comes from Northern Italy—which is why our crew nicknamed him "Antimo of the North" when we first started cooking and singing together at events.

• We arrive around 1 hour before food service: We roll in with our mobile wood-fired pizza truck or our 3m × 3m marquee and portable ovens, fire up the oven, and prep fresh ingredients.
• All-you-can-eat wood-fired pizza (2 hours): Pizzas come out of the oven every 90 seconds, hot and sliced onto the buffet table so guests can grab slices as they please.
• Natural, interactive entertainment: Guests don't have to sit down and watch a formal stage show. People walk up for a slice of Margherita or Diavola, chat with Matteo at the bench, and end up singing along.
